I did my kitchen after closing instead of through the builder. Once the new kitchen was designed it was clear it would not be centered. I had no grounds to ask the builder to move it of course. I hired someone who did small jobs like that and he opened up the drywall and centered it and closed it back up. He also added a couple of pieces of 2x4 (horizontally) to support the hood fan which was quite heavy, closed it up and it was good to go.
