That's actually a good time of year to be doing the framing. The roof will be on by the summer and then everything gets a chance to dry out.

Before finish flooring high spots are ground off and low spots filled. OSB products have some water protection - wax on the surface and sealed end cuts. Not a concern. If you want or need hardwood to run parallel to the joists, upgrade the thickness. This is also a good case for plywood - its less bendy than osb. |

I feel the best reason is way down the road if you re-floor the home. The plywood will be in better shape after you pull the nails. For most, OSB is fine. We went plywood, but not sure it will ever be worth the extra cost. The builder will charge you way more than the extra cost of the material, because they can.
