Default Construction of Home

I am watching my home get built (finally!) at major mac and dufferin. I notice that the material that they are putting up on the studs is like drywall instead of wood (particle board) as I see on other homes. Is this because they are building in the winter and does it make any difference? They are just at the framing stage, the roof was just starting to take shape on Friday.

It's not drywall. It's probably labelled Denshield or simular. This is a common sheathing for some builders, especially if there is going to be stucco.
